Beef Hotpot
Beef Hotpot - A delicious warming winter supper!
Cube 2lb of best quality stewing steak, chop 1lb of onions, a head of celery, 4oz of black olives and thinly slice 2lb of potatoes.
In a large ovenproof caserole, layer the onions, celery and olives, followed by the beef and sliced potatoes.
On each layer of beef splash a little red wine vinegar, season with salt and freshly ground pepper and a pinch of ground allspice and ground mace.
Finish on a layer of potatoes, pour over a pint of fresh beef stock, cover and cook in a moderate oven for about 2½ hours until the beef is tender.
